Inspired by the fabulous destinations Seabourn visits on their ships, Solis was created as a response to comments and feedback from Seabourn’s guests. 

Offering a sunny view from its interior design, this new fine dining concept has been exquisitely decorated with warm tones and textures, setting the stage for a relaxed and enjoyable dining experience. 

The menu, meticulously crafted by renowned chefs Anton Egger and Franck Salein, is a celebration of your favorite travel memories, featuring dishes that evoke the spirit of different cultures and destinations.

Seabourn Solis’ a menu to delight all senses

Debuting on Seabourn cruise ships this 2024, Solis offers an array of dishes reflecting the various range of flavors of the Mediterranean. This colorful menu is inspired by Greek flavors, olive tree fields, and enchanting Rivieras, catering to diverse palates and adventurous spirits. 

Start your meal with Piquillos De La Mama, basque piquillo peppers with fresh Murcia goat milk cheese served on country bread crostini, to then move on to a spectacular Bistecca Alla Fiorentina, a Tuscan-style grilled beef porterhouse steak, or Spiced Lamb Shank – chargrilled smoked eggplant with tahini, pomegranate, roasted pine nuts, and labneh. Vegetarian and vegan options are also available, ensuring a delightful culinary experience for all guests. 

Sourcing the finest ingredients to make globally inspired dishes, Seabourn Solis is part of the brand’s included dining options. Guests sailing onboard Seabourn Quest are already enjoying it, while the experience will be introduced across Seabourn Encore, Seabourn Ovation, and Seabourn Sojourn by Spring 2024.

Meet the Chefs:

The culinary masterminds behind Seabourn Solis are longtime Seabourn partners, Master Chef Anton Egger, and Senior Corporate Chef Franck Salein. Their experience working with Seabourn’s guests is precisely the inspiration behind Solis’ wonderful menu: “Over the years, Chef Franck and I have listened intently to discover what Seabourn guests enjoy about dining,” he says.“ With Solis, we’re combining all that we have learned and more into something they are sure to enjoy – and that we will enjoy creating.”

After being surveyed, Seabourn guests repeatedly ranked Mediterranean cuisine as their top pick for a new restaurant, citing fresh and healthy as their preferred attributes. With this in mind, both chefs made sure dishes, desserts, drinks, and the restaurant design all combined to create a delightful dining experience.

Chef Anton Egger is behind the concept of Solis, inspired by his own travels and experiences

Born into a hospitality family in Austria, Chef Egger began his career with local apprenticeships, which soon extended to 5-star restaurants across four continents. After becoming part of the Seabourn team, Chef Egger transferred to the line’s headquarters, then based in Miami, as Corporate Executive Chef, where he soon became the lead food and beverage partner for the entire fleet while building the line’s reputation as a culinary leader.

Once teamed with Chef Salein, they decided to expand the line’s cuisine by conceiving and developing popular venues such as Sushi, offering authentic Japanese sushi on Encore-class vessels, and Earth & Ocean, with daily menus highlighting sophisticated flavors inspired by the fleet’s travels around the globe.
