Kaiseki: The Fine Art of Dining

Kaiseki refers to a multicourse meal prepared using a particular set of traditional skills and techniques. It is also the name of one of the new and most intimate dining rooms on the Silver Dawn, Silver Moon, and Silver Muse. The Ambiance

The venue’s interior features accents of wood, stone, and leather.  Silversea’s designers also combine warm lighting with large installation art pieces to create the ambiance of a chic Tokyo eatery. 

This is one of the most intimate dining spaces onboard. Kaiseki has front-row seating for fourteen around a teppan grill and another twenty-four at tables. With total seating available for thirty-eight, Silversea charges a small cover charge to manage demand. We recommend reserving seats at the grill-top for the best experience and direct contact with the chef.

The Menu

As the name suggests, menu items at Kaiseki focus on meticulous preparation and elaborate presentation. Silversea executes both objectives creatively, from appetizers served in a nesting ceramic ball that separates into individual dishes when served to traditional sake services. 

The menu rotates to keep the experience fresh. The experience begins with an amuse bouche of edamame and a sweet soy dipping sauce. The meal consists of three portions a starter, a main course, and a dessert. Selections are made from a list of Fish, Meat, and Vegetarian dishes, or you can choose items from the teppan grill. Guests sitting around the grill will receive the full teppanyaki experience, giving you direct interaction with the chef.  The impressive knife and spatula work combined with facts and stories about the techniques and ingredients are all part of the show. 

Examples of dishes include appetizers like Snowcrab Delights with pickled ginger or Saku Tuna Tataki. Main courses of Wagyu Beef Teriyaki, Pork Belly Bonbons, Vegetable Gyoza, or Tofu cubes. Our favorite was the butterfly lobster from the Teppanyaki menu. The meal finishes with a dessert course of Tempura Icecream or Green Tea Sorbet.
